Origin

Worldwide poultry staple. Breast is the pectoral muscle. Mild flavor, high protein, low fat when skinless.

Herbal & culinary notes

Excellent lean protein for muscle repair. Pair with oil or marinade so it does not dry out at 375-400°F.

How to store

Refrigerate 1-2 days; freeze tightly wrapped up to 9 months. Once thawed in the fridge, cook within 24 hours and do not refreeze raw meat that sat out.

Food safety

Cook to 165°F (74°C) internal. Rest a few minutes; temperature can rise slightly while juices settle.

Food hazards

Same raw-poultry risks as other cuts. Thin pieces cook fast. Check the thickest spot so edges don't dry while the center lags.
