Air Fryer Chicken Wings
Dry-brined flats and drums with shatter-crisp skin: the base wing page before Buffalo or honey garlic.
If you only learn one air-fryer protein, make it this. Boneless breast is the query people type most ('temp and time,' 'raw chicken,' 'boneless') and it fails when the thick end is still pink while the thin end is chalk. The fix is boring and reliable: pound to even thickness, give the pieces space and trust a thermometer more than the clock.

A breast that is ½ inch on one side and 1½ inches on the other will never finish together. Fifteen seconds with a rolling pin or the heel of your hand to about ¾ inch changes everything. After that, 375°F (190°C) is enough. Blasting to 400°F just dries the surface before the center is safe.
For 6-8 oz (170-225 g) boneless breasts: about 8 minutes, flip, then 6-8 minutes more. Pull when the thickest point hits 165°F (74°C). Rest five minutes so juices redistribute. A 1400W unit usually needs two or three extra minutes after the flip, not a higher temperature.
Do not thaw on the counter and do not start at 400°F. Cook from frozen at 360°F (182°C) for 22-26 minutes, flipping at 12. Season once the surface looks dry. Always confirm 165°F in the center.

Follow each step in order. Photos show what to look for so the basket finish matches the plate.
Place each breast between parchment or plastic wrap. Pound the thick end with a rolling pin or the heel of your hand until the whole piece is about 3/4 inch thick. Pat dry with paper towels.

Rub both sides with olive oil, then season evenly with salt, garlic powder, paprika and pepper.
Preheat the air fryer to 375°F (190°C). Arrange in a single layer. If your air fryer runs hotter at the back, point the thicker ends that way.

Cook 8 minutes. Flip carefully. Cook 6-8 minutes more and check the thickest point with a thermometer. Pull the chicken when it hits 165°F (74°C).

Rest on a plate for 5 minutes so the juices settle. Slice across the grain and finish with a squeeze of lemon.
