How to store

Cool, dry, dark place with airflow. Not the fridge for whole bulbs (they can sprout or mold). Peeled cloves: fridge in a sealed container a few days; minced in oil must be refrigerated and used quickly.

Food safety

Garlic-in-oil mixes can support Clostridium botulinum if left at room temperature. Always refrigerate and use within days, or buy acidified commercial products.

Food hazards

Botulism risk in homemade garlic oil left unrefrigerated. Moldy or soft bulbs: discard.
