Step-by-step instructions

Follow each step in order. Photos show what to look for so the basket finish matches the plate.

Parboil and rough

  1. Cut the potatoes into large chunks. Cover with cold salted water, bring to a boil and cook about 8 minutes until the edges just start to flake when you poke them. Drain hard in a colander.

  2. Return the potatoes to the hot empty pan, clap the lid on and shake hard for about 10 seconds to rough up the surfaces. Leave them to steam-dry for 2 minutes. Those fluffy edges are what crisp.

Roast

  1. Toss with goose fat (or oil), salt and pepper. Preheat the air fryer to 400°F (204°C).

  2. Spread in a single layer. Cook 14 minutes. Add the garlic cloves and rosemary, toss and cook 12-14 minutes more until the corners are deep brown and the outsides feel glassy.

  3. Finish with flaky salt. Squeeze the soft roasted garlic over the potatoes if you like.
