Klyftpotatis is the wedge you want beside falukorv or grilled fish: skin on, oil, salt, and a little paprika or garlic. A short parcook keeps the middle soft before the basket crisps the edges.

Cut each potato into 6-8 wedges. Microwave with a splash of water, covered, 5-6 minutes until just starting to soften. Drain and pat dry. Toss with oil, salt, pepper, paprika, garlic powder and thyme.

Preheat the air fryer to 390°F (199°C).
Cook 18-22 minutes, shaking every 6-7 minutes, until the edges are deep golden and the centers are tender.

Serve hot with falukorv, salmon, or a spoon of crème fraîche.
