Air Fryer Japanese Miso Eggplant

Izakaya crunch from a basket. Ginger-soy thighs get a shaggy potato-starch coat, a mist of oil and hot air until the crust goes jagged. Lemon and Kewpie on the side. This is the air fryer's best case against a wok of oil.

Drain the marinade well before coating. Wet starch steams; dry, uneven starch fries into that classic jagged look.
Spray before the cook and again after the flip. Starch without fat stays chalky. Same lesson as sesame chicken.
Karaage waits poorly. The crust softens as it sits, so plate as soon as it hits temperature.

Follow each step in order. Photos show what to look for so the basket finish matches the plate.
Mix soy sauce, sake (or dry sherry), grated ginger, garlic and sugar. Add the chicken pieces and toss well. Marinate 20-30 minutes in the fridge.
Drain the chicken well so it is not dripping. Toss in potato starch until the pieces look shaggy and uneven. That rough coat is what turns crisp.

Preheat the air fryer to 375°F (190°C). Spray the basket. Arrange the chicken with space between pieces and mist the tops generously with oil.

Cook 8 minutes. Flip, mist again and cook 5-6 minutes more until the crust is dry and the meat reads 175°F (79°C).
Serve right away with lemon wedges and Kewpie mayonnaise. Karaage softens if it sits.
