Approximate kitchen reference. Not a lab label. Brands and cuts vary.

Origin

China originally; Japanese shoyu, Indonesian kecap, and Korean ganjang are cousins with different sweetness and depth.

Herbal & culinary notes

Fermentation brings glutamates. Very high sodium. Low-sodium versions help, or dilute with water/stock.

How to store

Unopened pantry; opened bottles last many months refrigerated (check label). Keep the cap clean.

Food safety

High salt preserves it; still discard if mold appears on the rim or smell turns rotten.

Food hazards

Very high sodium. Contains wheat in many brands. Allergen for gluten/wheat-sensitive people (tamari may differ. Read labels).
