Air Fryer Korean Fried Chicken

This is yangnyeom-style chicken for a weeknight: a thin potato-starch shell that shatters, then a sticky gochujang-honey glaze that clings instead of sliding off. You do not need a vat of oil. You do need a single layer and a dry coating before the sauce goes on.

Why starch, not flour

All-purpose flour browns soft in an air fryer. Potato starch (or cornstarch) dries into a thin, glassy shell when hot air hits it. Keep the coat thin (shake off excess) or you get chalk instead of crunch.

Glaze last, always

Sauce on raw starch turns leathery. Cook until the coating looks dry and deep gold, glaze in a bowl, then return to the basket for about two minutes just to set. That short second hit is what gives you lacquer without burning the honey.

Step-by-step instructions

Follow each step in order. Photos show what to look for so the basket finish matches the plate.

Coat the chicken

  1. Pat the chicken wings dry with paper towels. Any surface moisture will steam instead of crisp. Toss with salt and set aside while you set up the coating bowls.

  2. Put the potato starch in a shallow bowl. Working a few pieces at a time, toss the wings so every side is coated. Shake off the excess: you want a thin, dusty layer, not a paste.

Air fry

  1. Preheat the air fryer to 380°F (193°C) for 3-5 minutes. Lightly mist the basket. Arrange the wings in a single layer with a little space between each piece. Mist the tops with oil.

  2. Cook for 14 minutes. Flip each wing, mist again and cook 10-12 minutes more until the coating looks dry and deep gold and the meat at the joint reads 175°F (79°C).

Glaze and finish

  1. While the wings finish, simmer gochujang, honey, soy sauce, vinegar and garlic in a small pan for 1-2 minutes until glossy. Take off the heat and stir in the sesame oil. Toss the hot wings in the glaze, return them to the basket for 2 minutes to set the sauce, then finish with sesame seeds and sliced scallions.
