Air Fryer Vegetable Samosas
Spiced potato and pea filling in a thin pastry. Brushed with oil, they blister in the basket instead of swimming in ghee.
Bhajis usually swim in oil. A thick gram-flour batter and a generous mist still get you frilly, crisp edges in the air fryer if you keep piles small and spaced.

A short salt rest draws water that helps the batter cling.

Follow each step in order. Photos show what to look for so the basket finish matches the plate.
Salt onions 10 minutes; squeeze lightly. Toss with chickpea flour and spices, adding just enough water to coat in a sticky batter.
Too much water makes flat, pale bhajis. Think onion salad with flour clinging, not pancake batter.

Scoop small mounds into the basket, mist well, cook at 375°F (190°C) for 11-13 minutes, flipping once, until deep gold and crisp.
Mist again after the flip. Serve hot with chutney.
