Air Fryer Vegetable Samosas
Spiced potato and pea filling in a thin pastry. Brushed with oil, they blister in the basket instead of swimming in ghee.
Paneer tikka is made for the air fryer: dense cubes take on spice and yogurt, then brown at the corners without falling apart. Skewer with peppers and onion for a full plate, or cook the cheese alone for bowls.

Pat cubes dry before the marinade. Wet cheese slides out of the yogurt coat and steams instead of coloring.

Pat paneer dry. Mix yogurt, masala, lemon, oil, ginger, garlic and salt. Coat paneer (and vegetables if using). Rest 20 minutes.
Pat cubes dry first so yogurt spice sticks. Wet cheese slides out of the coat and steams.
Preheat the air fryer to 380°F (193°C). Arrange in a single layer or on short skewers that fit your basket.
Short skewers or a single layer both work. Leave gaps for browning.

Cook 10-12 minutes, turning once, until edges are browned and spices smell toasted.
Look for toasted spice aroma and browned corners. Overcooking makes paneer rubbery.

Serve hot with chutney or raita.
Cool raita or bright chutney balances the warm spice.
