Marinate

    Score chicken. Mix yogurt with masala, lemon, oil, ginger, garlic and salt. Coat well. Marinate at least 1 hour, overnight best.

    Thick marinade should cling. Wipe off huge globs before cooking so they do not steam.

    Tip. Pat dry before scoring so cuts stay clean.

Cook

  1. Air fry

    Cook at 380°F (193°C) for 20-24 minutes, turning at 11, until charred in spots and 175°F (79°C) near bone.

    Those dark spots are the point. Serve with lemon, onion and chutney.
