Marinate

  1. Marinate the pork

    Toss pork with oil, lemon, garlic, oregano, salt and pepper. Marinate at least 30 minutes.

    Lemon, oregano and garlic need at least 30 minutes. Shoulder stays juicier than loin.

Air fry

  1. Thread the skewers

    Thread onto short skewers that fit your basket (or cook loose cubes).

    Leave tiny gaps between cubes so heat hits every side. Soak wooden skewers first.

  2. Air fry until browned

    Preheat the air fryer to 390°F (199°C). Cook 12-14 minutes, turning once, until browned and 145°F (63°C) in the center.

    Turn once. Pull at 145°F in the center. Pork dries if you chase dark crust too long.

  3. Wrap and serve

    Rest 3 minutes. Serve in pita with tomato, onion and tzatziki.
