Marinate

  1. Coat the chicken

    Toss thighs with oil, pepper, chili, curry powder, salt, garlic, curry leaves and coconut. Rest 20 minutes.

    The coconut helps spices cling and brown without drying.

Cook

    Cook at 380°F (193°C) for 18-22 minutes, flipping at 10, until 175°F (79°C) and spice crust is toasted.

    You want darkened pepper edges, not burnt garlic bits. Keep garlic grated fine.
