Mix Dijon, oil, garlic, thyme, salt and pepper. Coat thighs. Rest 15 minutes.
Thin, even coat browns better than thick clumps.

Cook at 380°F (193°C) for 18-22 minutes, flipping at 10, until 175°F (79°C) and edges are browned. Finish with parsley.
Mustard will darken. That is flavor, not burning, unless it turns black.
