Gai yang is Thai grilled chicken: lemongrass, garlic, coriander root (or stem), fish sauce and a touch of sugar. The air fryer approximates charcoal edges on a weeknight.

Spatchcock or use thighs so the marinade hits more surface and cooking stays even.

Blend lemongrass, garlic, fish sauce, soy, sugar, white pepper and oil. Coat chicken. Marinate at least 1 hour.
Pound lemongrass if blending is weak. Woody bits should be fine.

Cook at 375°F (190°C) for 24-28 minutes, flipping at 13, until skin is browned and meat near bone is 175°F (79°C).
Serve with sticky rice and sweet chili sauce.
