Swedish meatballs are about soft texture and gentle allspice, not heavy Italian herbs. The air fryer browns them evenly while you whisk a quick cream gravy on the stove.

Milk-soaked crumbs keep the meatballs tender. Skip that soak and they turn dense.

Soak breadcrumbs in milk 5 minutes. Mix with meats, onion, egg, allspice, nutmeg, salt and pepper. Roll into 1.25-inch balls.
Do not overmix or the meatballs get tough. Wet hands help them stay round.
Tip. Chill 10 minutes if the mix feels soft.

Preheat to 380°F (193°C). Cook meatballs 12-14 minutes, shaking at 7, until browned and 165°F (74°C).
They should be deep golden, not gray. Work in batches if needed.

Melt butter, whisk in flour, then broth and cream. Simmer until thick; season with soy. Serve meatballs with gravy and lingonberry.
